“Añejo” is a classification given to Tequila after is has been aged for at least one year. To receive the Añejo designation, the distillers are required to age the Tequila in oak barrels that do not exceed 600 liters.
The aging process darkens the Tequila to an amber color and the flavor becomes smoother, richer and more complex. The flavors present in Añejo Tequilas are derived from the cask (barrel) as the distilled spirit draws out the unique characteristics of the wood.
As the name implies, The “Extra Añejo” classification is given to a Tequila that has been aged in oak barrels for more the one year that is required to name it an Añejo. An Extra Añejo must have been aged for a minimum of three years.

How to drink Añejo:
This distinctive Tequila has had time to mellow and pick up the flavours of the oak barrel that it aged in (see above). To enjoy the delicate and complex flavours it is best sipped at room temperature in a wide-mouth tumbler.
Adding ice will dilute the subtle flavors in these finely-crafted Tequilas so is not recommended. Chilling is also not recommended as it tends to subdue the delicate flavours. However, if you wish to to chill your drink without diluting you can add whiskey stones.
This is a high-quality, finely-crafted Tequila from a well-respected distillery. Don Julio offers some other exceptional añejos but this one will offer you a truly smooth and flavorful sipping Tequila at a reasonable price.
The Don Julio distillery is renowned as a maker of luxury Tequilas. If you are looking for an exquisite Tequila and have a bit of money to spend, they offer Don Julio 1942 Añejo Tequila and Don Julio Real Añejo Tequila. These are both aged for over two years and offer more of a spicy warmth than than the mellower Don Julio Añejo. They do however, come with a hefty price tag.
