Blanco, sliver or Plata Tequilas are those which have not been aged or stored in wooden barrels as Reposado and Añejo Tequilas have. They are the purest form of the agave distillation. Blancos are are bottled straight away after distillation or stored in stainless steel tanks for a maximum of two months.
Because they have not been stored in wooden barrels they have not drawn the color of the barrels, therefore they are, as the name implies, clear. Blancos are the most intensely flavored Tequilas, The intensely agave flavor has not been “rested” out of it or masked by the flavors from the wooden barrels.
Spanish for ‘white’ or ‘clear,’ Blanco Tequilas can also be referred to as “Silver” or, Spanish for silver, ‘Plata.’

Patron - Silver 70cl Bottle
2013-08-18 10:49:02Description:Patron Silver is called young or joven tequila. A similarity may be made to a young or nouvelle wine. It is known for its light, fresh, crystal clear look and an elegant smoothness not found in other silver tequilas. Many prefer this smooth, soft and light tequila over an aged and slightly oaky flavour. Those that know the difference may find Patron Silver the finest silver tequila available. It is perfect for blending with a high quality mixer or may be easily sipped. Patron Tequila, like the great wines and congacs of the world, is exceptional for a reason. It begins with the finest growing region in Mexico. High in the mountains of Jalisco exists a region which allows with perfect soil and climate which allows the sugar and acid balances of the Weaber Tequilana Blue Agave to mature and produce an 'Agave Pina' unequalled elsewhere in the world. Like premium wine grapes, the sugar acid balance must be perfect before harvest. Patron tequilas are the only tequilas truly produced in the traditional handmade fashion. After harvest the 'pina' are carefully selected, trimmed and then slowly steam baked. When cooked to perfection the 'pina' is macerated with large, natural, stone-milling wheels. The fermentation is done with the fibre of the 'pina' which helps impart its unique flavour and smoothness. After a double distillation process the tequila is aged in small oak barrels. When properly aged the tequila is fine filtered and ready for careful hand bottling. Each bottle is invidually signed and given a unique bottle number due to the limited number produced.

Porfidio Agave Spirit - Plata 70cl Bottle
2013-08-18 10:49:02Description:Limited stock. Colour: White crystal. Nose: Spicy, smoky, hint of caramelised vegetables. Palate: Rich palate with undertones of vanilla, cinnamon and gentle honey. Finish: Gentle heat with cooked plums and oranges. The agave takes 10 years to reach maturity and there are therefore only ten harvests per century. Each huge agave plant weighs 50 kilos (100 pounds) on average and 10 kilos (20 pounds) of agave are required to produce just one litre of agave spirit. By contrast, sugar cane, barley and grapes can be harvested at least once a year making rum, whisky and brandy rather less expensive to produce. At Destileria Porfidio, they steam-cook the agave plants for at least 24 hours. Once the cooking cycle is complete, the softened agave fibre has to be pressed to separate the agave juices from the agave fibre. As with ultra-premium olive oil, only the first pressing of the agave fibre is used for the production of Porfidio spirits. In addition, Porfidio does not dilute the freshly squeezed agave juice during the pressing process as some manufacturers would, as this would reduce the quality of the agave juice. The agave juice derived from mature agave plants contains natural agave sugar, which is the basis for the subsequent fermentation process. The agave juice is brownish in colour and similar to coffee in appearance. The agave juice is fermented by introducing micro-organisms, or good bacteria, which convert the sugar into alcohol. Bad bacteria would turn the agave juices into vinegar. The fermented agave juice has an alcoholic content of only 12% abv. Destileria Porfidio is the only factory in Mexico which implements quality fermentation in a rigorously controlled and therefore ideal environment. The fermented agave juice is distilled three times, in traditional alambic pots, separating the heads and the tails at each distillation and only keeping the heart of each distillate. Plata Triple-Distilled at 45% alcohol by volume is also the starting point for the ageing process which will over time produce Porfidio Anejo Single-Barrel. Prior to bottling, Porfidio Plata is adjusted to exactly 38% alcohol by volume.

Ocho - El Carrizal 2008 Blanco 50cl Bottle
2013-08-18 10:49:02Description:Colour: Clear and bright. Nose: Cedar, cut green grass or alfalfa, mint and spice, brine – like acidity, subtle, fruit, custard, honeysuckle. Palate: Earthiness and minerality, dry , soft attack, pepper and mint go to round plums at mid- palate moving on to sweetness , finishing dry, and austere long lingering with hints of raspberry. Rancho El Carrizal was nicknamed La Langacha by Don Felipe Camarena because it is a long thin strip of land which he joked could be jumped over. 1978 m, warm days and cool nights creates agaves with a balance of sugar and acidity as in grapes used for wine production. N.B. The above sentence explains the character of all Tequila OCHO expressions. Because of the combination of sugar (fruit and sweetness) and acidity (structure), the tequila holds its flavour elements in balance. Paul McCartney was the sweetness and John Lennon was the acidity in their songs. Between them they made 'balanced' music that has lived through the generations.

Excellia - Blanco 70cl Bottle
2013-08-18 10:49:02Description:Rested a few weeks in grand cru sauternes wine casks and cognac barrels, Excellia Blanco is clear with a faint of gold shade. The finish is long on the mid-palate and presents dried spices and faint jasmine notes. Excellia Blanco is the best example yet of a well-made blanco Highland tequila that dares to use, expertly, the sort of delicate flavours usually only seen in an anejo or extra-anejo, without losing the classic focus and strength which makes blanco the favourite tequila category among many connoisseurs. Excellia Blanco is floral and vibrant with a superbly smooth texture and a very complex Agave character. Jean-Sebastien Robicquet.

How to Drink Blanco/Silver:
If you are looking for a Tequila to do shots with lime and salt, you have found it. Blanco’s strong flavor and powerful punch mean it can mingle with other flavors rather than being masked by them. There are a plethora of fantastic Tequila cocktails that will benefit from a good Blanco. Unlike the Añejo and Reposado that are nice to sip unmixed, the Blanco is great for mixing Tequila drinks. Two great Tequila classics are the Tequila Sunrise and the Margarita.
